    ECUADOR Eat the World NYC review: On a stroll through the quieter streets of Corona, I kept noticing adults and children walking away from a central location with portions of freshly made salchipapas in their hands and eventually triangulated the location. A small South American vendor has set up shop daily between two churches to serve this popular fries and sausage dish and ceviche de chochos, a non-seafood ceviche eaten in Ecuador and Peru's mountainous areas. The main ingredients for this dish, chocho (lupini) beans, toasted corn, and fried plantain chips called chifles are stacked on the front of the cart for those in the know. He also makes grilled meat and rice dishes for those with heartier appetites and "real" ceviche on weekends for everyone, whether they are going to the Catholic or Baptist churches that he cooks between.
