    I’d been looking forward to this jazz bar restaurant for months after seeing it raved about on YouTube – it was on my must-visit list for the entire Sydney trip, and I saved it for our very last night. The vibe did not disappoint: dim lights, live jazz, super cool Parisian-brasserie-meets-speakeasy atmosphere. The starters were absolutely stunning: • Steak tartare – one of the best I’ve ever had • Duck parfait – silky, rich, pure perfection I was getting really excited… and then the mains arrived. Total heartbreak. My husband went for the famous off-menu cheeseburger that literally everyone orders (and the YouTuber I watched swore was life-changing). I was expecting something on the level of The Diplomat in Hong Kong – super juicy, next-level stuff. Reality? An extremely average, slightly dry burger. We’ve had way better at regular pubs. So disappointing that we couldn’t even finish it. My mistake was even worse – I got totally blinded by the word “Wagyu” and accidentally ordered beef bourguignon. I hate slow-cooked, gelatinous, fall-apart stewed meat with a passion (to me it has that wet, sticky canned-pork-in-soup texture). The lighting was so dark I didn’t read the description properly and only realised after it arrived It was exactly the texture I dread – soft and gluey. I managed two bites and gave up. Totally my fault for ordering badly, but still… So we left Sydney with a tinge of regret. The live jazz and ambiance were lovely, but after a mediocre burger and a plate of wobbly meat I can’t stand, the magic was a bit lost. Beautiful room, fantastic starters, but the mains really let the side down. Mixed feelings overall.

    What a fabulous French Bistro downtown Sydney. I walked in for lunch and all the dishes blew my mind ! The vibe is sexy romantic with a French flair. I recommend ordering the whole duck, the 400 grams steak, and the lamb. The proteins were cooked perfectly and the sauces elevated the tastes. The price was reasonable and we would love to come back again. Cheers to this amazing French Restaurant!

    Hubert is easily one of my favourite spots from my Sydney trip. From start to finish, the service, ambience, and vibe were just surreal — something you don’t often get in Melbourne. We had a tight schedule and needed to finish within an hour, and the team went above and beyond to accommodate us, which I really appreciated. The food was exceptional: • Steak (130g Wagyu) – cooked perfectly with a great balance of fat, exactly how I wanted it. • Layered potatoes – fantastic pairing with the sake; really enjoyed the textures. • XO escargot – blew me away, I was literally licking the sauce off the plate; the Asian-fusion flavours were incredible. • Roe boat – solid, enjoyable but not a must-have. • Duck parfait bread – complimentary bread was outstanding, perfectly soft and fresh. Overall, Hubert nailed the balance of creative dishes and perfectly executed proteins. Steak alone is a benchmark, but the other dishes really elevated the whole meal — far beyond what I usually experience in Melbourne. Highly recommend.

    We popped in for early dinner at the bar, while the setting was lovely it was extremely warm and felt stifling at times. We ordered the steak tartare, normandy burger and steak frittes. While all the dishes were delicious the steak frittes was a standout. The steak was super tender and perfectly cooked. We ended the meal with the chocolate tart which was the perfect ending to our meal. The chocolate tart had a hint of umami from the black sesame which perfectly balanced the sweetness of the chocolate.

    Back for special occasions and this time was to celebrate my daughter's birthday. Food has always been of great standard; my daughter loves their escargots. The rib eye was awesome although 1kg was too much even for a party of 3. I wish they would add one-person rib eye to the menu (after the reno perhaps)! Shout out to the live band as well! Excellent performance.

    We had an amazing experience at Restaurant Hubert! We tried the duck parfait which came with complimentary bread. It was absolutely delicious. The steak was cooked perfectly, probably one of the best we’ve ever had, and the lamb cutlets were tender and full of flavour. We also loved the beef tartare, so flavoursome. The escargots were a bit mid compared to the other dishes, but everything else more than made up for it. The service was warm and attentive, and the staff were attentive and made us feel welcome. The live jazz music added such a great atmosphere to the night. Highly recommend for anyone looking for a memorable dining experience! Easily one of my fave restos in Sydney now

    Thoroughly enjoyed eating here. The duck was the best I’ve had, moist and juicy. The pate and the roe boat (salmon roe, caviar, and uni) were fresh, sweet, and delicious although on the pricey side. Cocktails and sparkling wine were excellent. Service was superb and the ambience was top-notch with live jazz music. Escargot was just okay for the price (not the best I’ve had) but overall a great experience!

    Today I ventured through a large wooden door, down a dimly lit staircase to a Parisian haven of culture and food that was to die for. The venue is spectacular, the staff were all delightful and the food was the best French food I’ve had in Sydney. The Canard O’l orange is one of my all time favourite dishes… I’ve never had duck so tender and beautifully cooked. The live jazz provided a very special ambiance, this place is more than just a restaurant. They have a theatre, bar and host a variety of events, do yourself a favour and book a table or an event.
